Power Bites

Maybe you’ve heard of these great no-bake oatmeal balls?  Well, if you haven’t, I hope you give them a try because they are packed with protein and energy!  These little bites are vegan worthy, gluten-free and so easy to make.  They are a perfect breakfast on-the-go, an afternoon “get me through the rest of this day” snack, or an evening moment of “I need a treat that’s good for me!”   I like to pack them in my lunch, or eat them after a long swim workout. Give them a try!

1 ½ cups oats

½ cup flax meal

½ cup peanut butter

1/3 cup honey

1 tsp vanilla

Chocolate chips (optional – I use the mini semi-sweet kind and add about ¼ cup)

  • Mix all together, chill for 30 minutes, then make into balls (I use a 1” cookie scoop).
  • Store in fridge.
