No Bake Energy Bites

I sat in my armchair thinking for a while about what I could share today, and somehow my mind came around to food. When several other young women and I graduated high school a few months ago, the Relief Society shared with us a book of recipes all the woman in the ward had donated. This recipe has been my favorite, and I find myself using it over and over again, so hopefully you will too.

Ingredients:
1/2 cup creamy peanut butter
1/4 cup honey
1 tsp vanilla
1 cup old fashioned raw oats
2/3 cup shredded coconut
1/2 cup ground flaxseed meal
1/4 cup mini chocolate chips
1 tbl chia seeds

In a mixing bowl, stir together peanut butter, honey, and vanilla. Add the rest of the ingredients and stir until evenly coated. Transfer into freezer and chill until firm (about 30 minutes). Remove from freezer and shape into balls. Store in fridge in airtight container.

These are delicious, healthy, and great for a snack on the go in case you’re running late to yoga class, mission prep, or any other activity Mormon girls do. What are your favorite recipes?
