Filling Your Craving?

If you are like me, chocolate is a big part of your life. I want to share some of my favorite, super easy recipes. And I’d love to get some of yours! All of these take 30 min or less. Also, all of these have gluten free substitutions that work!


Gooey, Messy Brownie (Swedish Kladdkaka)


An extra gooey, messy chocolate brownie is the result of this delicious batter. Guaranteed to make you famous with just a few minutes of preparation. Keeping it in the oven just a little longer will make it a more American brownie.

Oven: 350 F
Prep time: 10 minutes
Bake Time: 15-20 min


  • 150 g (11.5 tbsp) melted butter
  • 3 eggs
  • 3 dl (1.25 cups) sugar
  • 2 dl (0.8 cups) flour
  • 1 dl (0.4 cups) cocoa powder
  • 1.5 tsp vanilla extract
  • 2 pinches salt


  1. Turn on the oven to 350 F.
  2. Melt the butter.
  3. Mix the eggs and sugar in a large bowl.
  4. Mix the dry ingredients in a small bowl.
  5. Add the dry ingredients to the sugar-egg mixture.
  6. Add in the melted butter.
  7. Butter and flour a 9″ cake pan and pour in the batter.
  8. Bake for 17-20 min until the top is dry but the middle is still runny. The toothpick should come out with batter on it. 
  9. Let sit for a few minutes. Add a dollop of whipped cream and some powdered sugar on top.

Gluten free: swap the flour for 1.5 dl (0.6 cups) of hazelnut flour, almond flour or coconut flour.


Chocolate Dream Cake (Gluten Free)


Oven: 475 F
Prep time: 20 minutes
Bake Time: 5 min

Cake Ingredients:

  • 3 eggs
  • 1.5 dl (0.6 cups) sugar
  • 0.75 dl (0.33 cups) potato starch
  • 2 tbsp cocoa powder
  • 1 tsp baking powder

Cake Instructions:

  1. Turn on the oven to 475 F.
  2. Mix the eggs and sugar in a large bowl. Mix the dry ingredients in a small bowl. Sift the dry ingredients into the sugar-egg mixture.
  3. Place parchment paper on a cookie sheet and pour the mixture on. Shape the batter into a rectangle.
  4. Bake for 5 minutes.
  5. Sprinkle sugar on another piece of parchment. Flip the cake onto it and gently pull off the other parchment paper.
  6. Place the cake in the fridge to cool.

Filling Ingredients:

  • 100 g (6 tbsp) room temperature butter
  • 1.5 dl (0.6 cups) powdered sugar
  • 2 egg yokes
  • 2 tsp vanilla extract

Filling Instructions:

  1. Mix the butter and powdered sugar in a bowl.
  2. Add the egg yokes and vanilla sugar.
  3. Mix!

Putting it all together:

  1. Spread the filling on the cake, after it has cooled down.
  2. Roll the cake up. (See picture above)


Best Hot Chocolate Made

chocolate milk


  • Milk
  • Nesquik or other powder
  • Heavy Whipping Cream


Grab your favorite mug and pour milk into it. Microwave the milk in the mug. Add chocolate to your hearts desire. Then comes the magic! Add un-whipped heavy whipping cream to taste! ENJOY!


Chocolate Balls (No Bake & Glutenfree)


Oven: No bake 😉
Prep time: 20 minutes


  • 100 g (6 tbsp) room temperature butter
  • 1 dl (0.4 cups) sugar
  • 1 tbsp vanilla
  • 2 tbsp cocoa
  • 3 dl (1.25 cups) oatmeal
  • 2 tbsp water


  • Swedish pearl sugar. find it here.
  • coconut flakes


  1. Mix the butter, sugar and vanilla extract well. Mix in the cocoa. Add the oatmeal and water. Mix until everything is well blended. (Remember to check for butter clumps)
  2. Make balls (small or big). Pour the pearl sugar or coconut flakes on a plate. Roll the balls in the sugar or flakes.
  3. Enjoy or place in the fridge and save for later.

    YUM! I just tried some really tasty brownie M&M cookies!
    You’ll need a brownie mix, 1/4 c. flour, 1/4 c. vegetable oil, 2 eggs, 1/2 c. chocolate chips, and (optional) 1/2 c. M&Ms. Preheat oven to 375. Mix the first four ingredients until smooth dough is formed; fold in chocolate chips and M&Ms. Use a cookie scoop or tablespoon to form balls of dough and place on parchment-lined or greased baking sheet. Bake for 9 minutes. When cookies come out of the oven, give them a little tap on the stovetop or counter to let the air out. Let cool on sheet for 2-3 minutes before moving them to a cooling rack. SO yummy!!!!

    The Swedish brownies are so good! I used Pamela’s Gluten Free baking mix to replace the flour, and it worked perfectly. Thanks for a delicious recipe; it was a hit with my three younger brothers.
